Create: Apfelphannküchen (Apple Pancake)

Knock their socks off this season with ‘Apfelphannküchen’ for breakfast

Saying Apfelphannkuchen is infinitely harder than cooking this delish german breakfast dish. The Shaffensmith is here to prove it to you - Here’s the phonetic pronunciation: ‘AP-fel-fan-kookhen’ (yowzah!) and below is the recipe. I make this dish using my high-speed blender and a cast iron skillet…you can too!

Ingredients:

  • 2 eggs

  • 1 cup flour

  • 1 cup almond milk (or any milk you like)

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 3 dashes clove powder

  • 3 tsp pumpkin pie spice

  • 1 TBSP cinnamon powder

  • 1 TBSP vanilla extract

  • 1 TBSP maple syrup (or 2 TBSP sugar)

  • 1/2 cup apple sauce

  • 1 ripe apple (not too hard) - peeled and sliced thinly

The Steps:

  • Preheat oven to 400. Heat cast iron or other 10” skillet in oven for 5 minutes.

  • Into blender pul all ingredients and blitz for 30-50 seconds.

  • Grab your potholder and remove skillet from oven and spray generously with a non-stick spray.

  • Pour contents of blender into skillet. Gently lay apple slices atop in whatever design suits you.

  • Spray the top of your Apfelphannküchen lightly with the non-stick spray (gives it a nice finish).

  • Cook for 20-25 minutes. Test center after 20 minutes to see if done. If top is well done, but the center isn’t, lightly cover with foil and cook an additional 5-8 minutes at a lower temp - depending on the season and your oven, lower the temp to 355 degrees and continue cooking for 5-8 minutes.

  • Let rest for 5 minutes before slicing and serve with warm maple syrup.
